Everett's on High Street in Wexford is a unique dining experience bursting with history. Located in the remains of the 15th century John Collyn House, experience a unique dining atmosphere in either the Front Room or the Vault.

The Front Room oozes historic charm with features dating back to the 1460s, it has been identified as the house of the eleven times mayor of Waterford James Rice whose 1481 cadaver tomb is preserved in Christ Church Cathedral and is one of the finest in Ireland. Enjoy an atmospheric evening catching up with family or friends. The Vault is a more intimate and romantic located beneath the house of the 15th century eleven times mayor of Waterford James Rice. The Vault is ideal as a private dining room for your special occasion.

Everett's was the highlight of our stay in Waterford. The food was just amazing, everything we tried was so good (including the wine)!

Appetizing and delicious food!! We went for 3 course dinner. For main course, I tried wild venison for the first time which was perfectly cooked. Highly satisfied. Perfect dinner experience.Kudos to the chef!!
