Dede

Dede was awarded a Michelin Star for Dede in 2021, and since then, he has received a second Michelin Star. He moved to Baltimore village in 2017 to explore food, producers and ingredients in his newly adopted home.

He has previously worked Chapter 1 in Dublin, a 2 Michelin star, Patrick Guilbaud's restaurant a 2 Michelin star in Dublin, & Moshik Restaurant a 2 star in the Netherlands, Maaemo a 2-star restaurant in Norway and the Mews restaurant where he earned his first Michelin Star. in 2018 and retained it in 2019 for 2020.

Dede's style is an inventive interpretation of elegant cuisine with Turkish inspiration, elevated with refined techniques and great creativity. This creates a unique style that is delivered through his passion for the natural elements bringing guests on an innovative culinary journey.

We've travelled to West Cork from Dublin just to dine in this restaurant. And it worth every bit of it. This was the best Michelin star food I've ever tasted. Place is cozy, and the food is hearty. Wine pairings were amazing too. Turkish influence on the food made us feel like back home. We also had a chat with the head chef himself, Ahmet Dede. He's such an inspiring person! Many thanks to Ahmet and to all the friendly staff of this amazing restaurant for making our night special.

Well balanced dishes with exceptional ingredients and Dede's Turkish twists make for very special meals. Ask for wine recommendations and you will not be disappointed! We have enjoyed both tasting menu and fish bbq- both have left us eager to return

Best meal of 2021! If we only had one chance to dine out this year this be our choice. Carefully balanced set, if for very settle and sublime flavour mix of best of West Cork and modern chef vision has to offer. Freshest in season local ingredients reimagined by chef Ahmet and his team for his summer menu proves an instant hit

Last Dinner before lockdown 'part 2'
Was in baltimore last weekend on a county vacation and how lucky it turned out to be. By chance stopped for coffee and choc caramel tart (yum silky smooth) at the custom house. Booked a table for that evening, because as the lady said, she didn't know if they would be open Sat night with level 4/5 imminent. What a memorable night it turned out to be. Having been forewarned that we would be eating in the courtyard, we came well wrapped up. We were put at a table by a chiminee and were very cosy. The food was beautiful. Prepared and served with such pride, respect and love. Faultless. Dede was out explaining anything you wanted to know. When they reopen, go, if you can.

A GASTROMONIC DELIGHT !
During a recent visit to Baltimore, Co. Cork, we were fortunate to get a booking in Dede’s Restaurant at the Custom House. When you arrive you know you’re going to have a special evening.
Ahmet offers a three course set menu, comprising of the best local produces, cooked and artistically presented which succeeded in arousing many of my over 5,000 taste buds. We started with sourdough bread and saksuka, then Manti, followed by tomato mozzarella, then lamb bulger but the delight of the food was the apple, blackberry, lavender and sorrel grape lemon. The suggested wine by Maria Archer – Chateau Brun-Despagne Grand Vin de Bordeaux paired perfectly with everything we ate.
The front of house staff, directed by Maria, were competent, efficient, friendly and whose love and knowledge of the food was evident. All wore masks and Covid 19 conformity was followed at all times.
We were invited to partake of our vintage port in the Barbeque area surrounded by a very warm chiminea, complete with sheep-skin rugs and warm wraps – were everybody observed Social Distancing.
