LIMA London is the creation of world-renowned Peruvian chef, Virgilio Martinez and his partners,the Gonzalez brothers. Robert Ortiz, Virgilio’s longtime friend, runs the kitchen.
Virgilio Martinez, is chef patron of Central in Lima, Peru, which is ranked #15 of the list of San Pellegrino’s 50 Best Restaurants in the World and also named The San Pellegrino Best Restaurant in Latin America. Central was also chosen as the best restaurant in Peru in the 2012, 2013 & 2014 editions of the “Summum Guide”.
Sustainability is integral for us. While sourcing the majority of our ingredients from the British Isles, we will also showcase Peru’s vast biodiversity by bringing some unique organic and wild produce from small growers based in Peru, specifically from the Andes and the Amazon.
Peruvian cuisine is a melting pot of different cultures which have come together to form a unique blend of flavours and techniques. With the arrival of European and Asian immigrants centuries ago, their ingredients and customs intertwined over the decades with those of the locals creating one of the fastest growing gastronomic movements today.
LIMA Fitzrovia is the first Peruvian restaurant to be awarded a Michelin star. Created two years ago, it is a representation of the gastronomic expansion that has taken place in Peru during the last few years, with the idea of showcasing Lima, the city, to London, as the gastronomic capital of the Americas.
LIMA Floral was created with the aim of presenting Peru as a country full of diversity: ecologically, culturally and historically, sharing an authentic and native culinary offering along with the latest findings direct from Virgilio’s Central restaurant in Peru.
